An Easy Recipe for Leftover Roast Beef

My sister gave me some leftover roast beef Sunday afternoon. She doesn't eat leftovers, but I do. So, I came up with my own easy recipe for this delicious meat that she thought was overcooked. April 24th would have been my brother Gene's 69th birthday. He loved whipping up a meal from scraps he found in the refrigerator. He should have been a chef. I used to love to watch him eat.

Here's my easy recipe for leftover roast beef. First, I sliced the beef into reasonably sized chunks on a wooden cutting board. Wood is best when slicing meat. Then, I layered my pan with virgin olive oil and added my seasonings including salt and pepper, garlic salt, onion powder, steak seasoning, a little Adobo, parsley, and a small cup of red wine. I let that simmer for a few minutes and then added chopped garlic. You want to make sure the garlic doesn't burn, so keep the heat low. Once the garlic was slightly browned, I added the beef, put a lid on the pot, and let it sauté for about 20 minutes until the meat was nice and soft. Then, I added egg noodles into the same pot and stirred everything until the noodles were covered with the juices. I turned off the heat and let it sit, covered, for about 10 minutes. Alas, the taste test. Talk about delicious! My brother would be proud of me.

At 60 and beyond, most of us don't want to spend too much time making dinner, so easy recipes can be appealing. I make sure to always have the essential seasonings and ingredients in the house. Garlic is a staple. You'd be amazed at what you can come up with if you just use a little imagination. Like my brother did, just look in your refrigerator. Most likely, you can whip up an easy recipe, too. Too many people go hungry, so it's a good thing to make use of leftovers until there's nothing left to eat. Or until the next leftovers. Mangiamo!
